Pizza-cademy promises to make pizzas from scratch in less than 4 minutes. It represents a new concept in fast food and is the first of its kind.

Pizza-cademy promises to make personal pizzas, from scratch, in less than four minutes.

The shop is the brainchild of entrepreneur Jonathan Lei (shown above throwing dough into the air) who created a special fast-cook oven to prepare pizzas while you wait.

Lei is no stranger to the restaurant business, or to Bay Fair.

In November he opened a Digger's Diner in the Bay Fair food court. Diggers offers burgers and other luncheon fare with a graveyard theme -- owing perhaps to the caloric count of menu items.

The Digger's Diners were started in Concord by his family, Lei told Patch.

Pizza-cademy is a new concept and Bay Fair is its first location.

If the local store becomes a crowd-pleaser and profit-maker, could it become the prototype for others of its kind?

Lei is cagey about his plans.
